    Not the prettiest process but the final product is wonderful! The two side shots of the tongue are before and after the outer membrane is removed. Definitely the gnarliest part of the cook!

    Beefy flavor with a pleasant crispy/fatty texture. I followed [this recipe](https://www.seriouseats.com/sous-vide-tacos-de-lengua-tongue-recipe) from u/J_Kenji_Lopez-Alt. 170 for 48 hours. Highly recommend if you’re feeling adventurous!
