I will never not post this recipe, risotto is a labour of love. But it is SO worth it!
For the salmon:
– 2 salmon fillets
– Tsp old bay
– Tsp parsley
Evenly add the seasoning to the salmon fillets and cooked in my airfryer for 10 mins on 190.
For the risotto (for two people):
– 150g risotto rice
– 1 small diced onion
– 2 garlic cloves
– Litre of stock
– 30g sundried tomatoes
– 30g parmsean
– Chopped dill
I also added peas today, but this isn’t essential!
Start off by gently frying off the shallots and garlic until soft. Then add your risotto rice for a minute or so before adding in the tomatoes(save some to sprinkle on top), then you want to slowly add in your stock, wait for the liquid to be absorbed before adding anymore and repeat until all stock is used up. Once the risotto is almost done, add on the parmesan and dill.
Once the salmon is done flake this up and add on top of the risotto and serve!
I added some broccoli to the side of mine. 😋
