Chef John is my fav chef and I have learned so much about cooking. And one thing I’ve learned, every dish has to get a sprinkle of some sort of green stuff. Chive, green onions or parsley. EVERY DISH even chicken wings.

Ironically, the zionist regime banned Palestinians from planting and harvesting zaatar (the actual herb used to make this blend) only to culturally appropriate it later and claim it their own, just like everything Palestinian.
I've already been using sumac along with garlic powder and salt and pepper on pork chops, but I might try making some za'atar on my next batch and seeing how I like it.
Fishing for extra engagement by double dipping at the very end is a pro move.

Bought the wings whole, and then waste time to cut them into little bits? Really? I just snap the joints so lay flat, and use the whole thing.

Oh that's great, after seeing this recipe I looked it up and it seems I can also use Mountain savory/Winter savory which is a very popular herb in my country to make the spice mix. I've wanted to make a cool new spice blend with it so I am excited to try it out.

where i live it is very common, mostly we just spread it on bread with plenty olive oil

Za'atar isn't actually normal thyme, it's a wild thyme with a slightly different taste.
EDIT: Origanum syriacum is what you want.

Couple of side notes:
1. Ground coriander seeds will be a perfect addition to this spice mix.
2. Since you've mentioned tahini and yogurt- you should try mixing them together. Just replace the water in the tahini with your favorite yogurt until you've reached your desired consistency.
Its a very common thing here in Israel.
