Today, Sarah will be showing four Christmas desserts: healthy rum balls, chocolate mousse with strawberries, red and green festive smoothie and gingerbread spiced cookies.

CHRISTMAS SMOOTHIE
Ingredients
Red layer
1/2 cup of yoghurt
2 bananas
1/2 mango
2 strawberries
1/2 beetroot
Lemon juice of 1 lemon
2.5 cups of ice
Squeeze of honey
Green layer
2 bananas
1/2 mango
3 cups of spinach
Juice of 1 lime
1 teaspoon of honey
2.5 cups of ice
Method
Blitz the ingredients of the red layer in a blender and then add to a glass.
Then blitz the green ingredients. Add the green first to glass to be 1/2 full and then spoon the red layer on top.
Serve and enjoy
RUM BALLS
2 cups of mixed raw nuts
1/2 cup of rolled oats
1 teaspoon of ground ginger
1 teaspoon cinnamon
1 teaspoon mixed spice
1 tablespoon cocoa
1 tablespoon chia seeds
10 fresh dates
1/2 cup of rum
2 tablespoons of honey
1 teaspoon vanilla extract
Cacao and coconut for coating
Method
Place al the ingredients to a food processor or a blender and blend well and a dough forms. Roll into balls around 2 tablespoon of mix in size. Roll the ball through coconut and place on a tray lined with baking paper.
CHOCOLATE MOUSSE AND STRAWBERRY TRIFLE
Ingredients
4 ripe avocados
1 cup cacao
1 cup melted dark chocolate chips
1/3 cup of almond milk (you can use milk of your choice)
2 teaspoons of vanilla extract
Pinch of salt
2/3 cup of maple syrup
10 medjool dates (pitted)
4 punnets of strawberries stems removed and chopped in 1/2
Instructions
Combine all the ingredients in a blender or food processor until completely smooth.
Add to a trifle dish and they layer with strawberries.
Garnish with shaved chocolate and extra strawberries.
Keep in the fridge
Little tip – If the dates aren’t really soft, soak them in boiling water for 5-10 minutes.
Note- With the addition of milk, this depends on the size of the avocado and the seed inside. So just add the milk by tablespoons until you get the consistency of a mousse.
GINGERBREAD CHRISTMAS COOKIES
Ingredients
Makes 20
2 2/3 cups of almond flour
1/2 cup of coconut sugar
2 teaspoons of ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
Pinch of sea salt
6 tablespoons of coconut oil
2 tablespoons of water
1 egg
3 tablespoons of maple syrup
Method
Mix the dry ingredients in 1 bowl and in another bowl the wet ingredients. Combine the wet and dry. Don’t over mixd.
Preheat your oven to 180 degrees and line a baking tray with baking paper. Roll into balls around 1 1/2 tablespoons per ball and then place on the baking tray. Flatten with the palm of your hand.
Bake for 10 minutes. Cool and enjoy.
