Moroccan Soup (Harira)
A comforting and aromatic dish, Harira is a traditional Moroccan soup made with lentils, chickpeas, and vibrant spices. It’s perfect as a hearty meal or a starter!
Ingredients:
1 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 tsp ground turmeric
1 tsp ground cinnamon
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 cup red lentils
1/2 cup cooked chickpeas
1 can (14 oz) diced tomatoes
4 cups vegetable or chicken stock
1/4 cup fresh cilantro, chopped
1/4 cup fresh parsley, chopped
Salt and pepper, to taste
Juice of 1 lemon
Instructions:
Sauté Aromatics:
Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until soft.
Add Spices:
Stir in turmeric, cinnamon, cumin, and paprika, cooking for 1 minute until fragrant.
Simmer Soup:
Add lentils, chickpeas, tomatoes, and stock. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
Finish with Herbs:
Stir in cilantro, parsley, lemon juice, salt, and pepper. Cook for another 2 minutes.
Serve:
Serve warm with crusty bread or over rice.
