I’ve always used King Arthur bread flour which can get expensive but I just made this loaf with the $8 25lb bag Miller Milling company flour at Costco. Was surprised how nice the crumb turned out ! Also my first time getting an ear. Good to know I can still get a great loaf with cheaper flour.

Used a Perfect loaf’s all purpose flour sourdough recipe.

450g flour
300g water
10g salt
92g starter

Mixed everything, waited 20 min then did 2 stretch and folds and 2 coil folds, about 30 min apart. Bulk 14 hours until 70-80% rise, dough temp 70F. Cold proof for 27 hours.

    Nicely done!!

    I’ve seen very positive comments on that flour from others. Checked my local Costcos, but not out here. They seem to carry different flours regionally.
