The cauliflower and cashews in this make it absolutely creamy. We’re obsessed with it in our house. The original [vegan corn chowder recipe is here](https://www.liveeatlearn.com/vegan-corn-chowder/).
1. Flavor Base: Heat 1 Tbsp olive oil in a large pot over medium heat. Add 1 diced onion, 1 diced red bell pepper, and 3 minced garlic cloves. Cook about 3 minutes until onion is soft. 2. Soup-ify: Stir in 6 cups vegetable broth, 1 chopped head cauliflower, 3 cans (15 oz each) drained corn, and ½ tsp each salt and smoked paprika. Cover and simmer about 15 minutes until cauliflower is fork-tender. 3. Blend: Remove about half the veggies and set aside. Add 1 cup cashews to the pot, then blend soup until smooth with an immersion blender (or carefully blend half the soup plus the cashews in a standing blender). Return reserved veggies to the pot. Enjoy warm!
