50% bread flour, 25% whole wheat, 25% 6 cereals mix. 83% hydration which is way too much for this recipe.

Biga 24h, then mix and knead and all the night in the fridge. Baked at 250C for 20 minutes, 230 for 20 minutes and 200 for the last 20 minutes.

Incredibile taste with a great texture and smoked notes from the cereals.
