I’ve made these on my own at least a couple of times, though I’ve left off the onions, and they are really delicious. Between this and other meatloaf recipes, HF has really sold me on a meal I long considered boring and bland

You’ll have to excuse the paper plate. It was… a day yesterday.
I actually caramelized about 7 onions last week before they went bad, so I didn’t use HF’s onion this time. I just defrosted some of the caramelized buddies. This was much better anyway because HF’s instructions are not for caramelization as much as they might like to pretend, LOL. Shit takes like 45-60m.
ANYWAY, these sandwiches were super good. My husband ate his as-is. The bread fell apart super easily on his, so I pulled out a loaf of my own bread, which is 40-cal per slice anyway and makes the sandwich a lot more reasonable for me on my 4’10” frame anyway.
The flavor of the little meatloaves was great, and we were big fans of the horseradish dijonaise. Would definitely make again, but honestly, might just remember this one for cooking outside of HF since I swapped so many things anyway.
