You can use less pepperoni (or turkey pepperoni!), mozzarella, and olives to suit your needs. You could add more veggies. Tomatoes would be good. With just the vinegar it’s tart and briny and so good.

It’s still 2.5 hours til dinner but I’m hungry now. I’d rather eat something with volume now, it should take me about 45 minutes + to eat (while working). I’ll have a chicken breast with more veggies for actual dinner.

    I’ve been using pickled onions and/or marinated artichoke hearts in my salads and it’s a game changer! I’ll still occasionally use a small amount of dressing but it’s minimal compared to what i used to!
