Ingredients:

🍀 Main Ingredients:
• 1 large onion, chopped
• 2 tablespoons ginger-garlic paste
• 1 kg minced meat (beef)
• 2 medium tomatoes
• 12–15 cashew nuts
• 2 tablespoons poppy seeds
• 10–14 almonds
• 2 green chilies
• 1 cup yogurt
• 1 bay leaf
• 5–6 black peppercorns
• 4 cloves
• 2 teaspoons cumin seeds
• 1/4 cup oil

🍀 Spice Mix:
• Salt, to taste
• 1 tablespoon black pepper or to taste
• 1 teaspoon turmeric
• 1.5 teaspoons red chili powder or to taste
• 2 teaspoons coriander powder
• 1.5 teaspoons garam masala
• 3 teaspoons amchoor (mango) powder

Note: if you’re a non desi, divide spice mix quantity into 2 and only use 1.

🍀 Garnish:
• 2 tablespoons lemon juice
• 1-inch ginger piece, sliced and julienned
• Fresh coriander, julienned
• 2–3 green chilies, sliced

Instructions:
1. Heat 1/4 cup of oil in a pan and sauté the chopped onions until lightly golden.
2. Add the ginger-garlic paste and whole spices (bay leaf, black peppercorns, cloves, cumin seeds) to the onions, cooking until aromatic.
3. Add the minced meat to the pan and cook until it changes color.
4. While the onions are sautéing, prepare the paste by blending the tomatoes, cashew nuts, poppy seeds, almonds, green chilies, and yogurt until smooth. Set aside.
5. Once the meat is browned, stir in the spice mix and the prepared paste into the minced meat, mixing thoroughly.
6. Cover the pan and cook on low heat until the meat is tender and the oil separates.
7. For a smoky flavor, place a hot coal in the pan, drizzle with oil, and cover to infuse the smoke into the meat for a few minutes.
8. Garnish with lemon juice, chopped ginger slices, fresh coriander, and sliced green chilies before serving.
