2 day old, Breadtopia live starter culture, after 3 feeds π
1 cup active starter
1 ΒΌ cup water
3 cups bread flour
1 tsp salt
Mix starter, water, and flour together. Cover and let rest at room temp for and hour.
Dimple in salt, rest for and additional 30 minutes.
2 sets of stretch and folds 30 minutes apart, followed by 2 sets of coil folds 30 minutes apart. Rest 30 more minutes.
First shaping on lightly floured surface. Rest for 1 hour on the counter covered.
Seconds shaping and place into floured banaton. Rest for 30 minutes on the counter covered, then in to the fridge for 12-16 hours to cold proof.
Preheat oven and dutch oven for 30-45 minutes at 450F.
Flour and score dough before placing into dutch oven with the lid on for 30 minutes
Remove lid and continue baking at 450F for 15 minutes.
Cool for 2 hours on a wite rack and enjoy π
