I made stuffed tiny pumpkin! Ohmygod they were so good.
I didn’t take the most beautiful photos just cause I was so excited to eat them! They were literally so filling and so delicious. For both, it was about 350 calories and about 25 grams of protein!
In total, once the seeds were scooped out and not counting the skin, this is roughly 600 grams of edible pumpkin (both pumpkins around 300 grams) which comes in to about 156 calories. As I made the filling I threw them into the oven at 350 for about 20ish minutes.
The filling: 20 grams of instant potatoes (73 calories) little bit of Greek yogurt (30 calories) i threw in some finely chopped onions (8 calories) I mixed in seasoning (salt, pepper, garlic, Italian seasoning) and water. I transferred that to a bigger bowl and threw in some canned mix veggies I had.(30 calories) and then for a little protein I threw in like an ounce and half of chicken (55 calories)
Then I took the tiny pumpkins out, stuffed them and threw them back in for like 20ish minutes.
Ultimately I think next time I do this (cause I’m so doing this again) I’ll throw in more chicken. I also think I’ll play around with the instant mash potatoes cause I feel like they could be better. Overall this was just my first time with this recipe so if I make any huge improvements I’ll post it again, kind suggestions are welcomed!

Also I have so many tiny pumpkins I’m trying to find ways to use them, if anyone has any ideas please share!! :]
