Ingredients (8 servings):
– 800g (28oz) salmon, skinless and boneless
– salt, black pepper
– 1.5 tsp dried dill
– 1 tbsp olive oil
– 1 yellow onion, diced
– 3 garlic cloves, minced
– 460g (2 cups) frozen spinach
– 120g (1 cup) cream cheese
– zest of 1 lemon
– 1 tsp lemon juice
– 2 tbsp fresh dill, chopped
– 2 sheets puff pastry (320g / 11oz each)
– 1 egg yolk, whisked
Bake for 25-30 mins at 200C (400F).
