Marinated Chicken Shawarma Skewers with Onion & Tomatoes over Scallion Rice

This was delicious. I decided to add pickled red onions, because HF taught me how easy it is to pickle things in the microwave. I want to make on my own, but I need to figure out the creamy Shawarma sauce.
