    Is that a long filet? It looks flatter than any tenderloin I’ve seen but larger than any filet section I’ve seen

    Pan gotta be screaming hot. You don’t want to cook it through. You want a quick hard sear. It’s fun to make once in a great while.

  9. I think you’re supposed to use filet instead of ribeye. Ribeye is a little too fatty and you won’t render alot of the fat even with the wellington bake process.

    Other than that, looks great!
