Beautiful 🤩 Ok, how do you get such a firm “skin” on the dough? I do bulk ferment and then cold proof in the fridge – usually 12-15 hours, but have done 36 (bc I forgot about it oops) but I can’t get those clean cuts. I have a sharp blade, but it still doesn’t look a clean as that
