
I asked the cheesemonger for something gooey and flavourful and this is what they suggested. It’s a three-milk blend (cow, sheep, goat).
The texture is interesting, soft and a bit runny but also fluffy. Quite rich and buttery. The flavour I found slightly lacking. Nice bloominess from the rind and hints of mushroom with a tiny bit of funk, but it lacked the punch of a nice Brie de Meux or the umami of a Delice. More of a delicate, subtle profile. It did pair quite nicely with fresh fruit (cantaloupe).
Overall, glad I tried it but I don’t think I would buy it again. It was quite expensive ($30 Cdn). I’ll stick with my faves, which are mostly unpasteurized!
