Greek traditional praso me kotopoulo avgolemono aka chicken leek stew avgolemono! A natural Greek medicine food, super comforting! My mom’s used to make it pretty often for us, although as a kid was not a big fan of leek, I used to love this specific dish and now I absolutely adore it! • ingredients:
– 2lb chicken cut of your choice ( in bite size)
– 6-7 leeks clean and cut in chunks
– 3 carrots cut in chunks
– 1 big onion diced
– 3 diced garlic cloves
– 1 handful dill
– salt & pepper as needed
– 2 bay leaves
– 6 cups of water
– 1/3 of a cup olive oil
For the avgolemono:
– 1-2 lemons
– 2 eggs room temperature
– broth from the stew
• instructions:
– add olive into a preheated large pot
– add the chicken and sauté until is lightly browned, add the onion, the garlic and the carrots and sauté for about 8 minutes, then add the leek , the dill, the water and the seasoning , stir , cover and let cook for about 40 mins to 1 hour in medium heat
– when ready reduce the heat at low, into a bowl bowl add 2 eggs and whisk until are fluffy, the add the lemon juice from the 2 lemons and keep whisking and then add 3-4 ladles from the stew broth while you are whisking ( this is called avgolemono) , when is combined transfer the avgolemono over the stew , mix gently with a spatula or spoon, serve and enjoy with freshly baked bread and feta cheese
