First post on Reddit! I’ve been playing around with a recipe I found posted here recently. ( https://www.ambitiouskitchen.com/protein-packed-breakfast-acorn-squash/ ) it’s so tasty, I find it hard to make sweet breakfasts that keep you full but this one does a pretty good job!
first time I had it I made it almost one for one to the recipe but since then I’ve made some tweaks:
I didn’t like putting the yogurt straight on the squash so instead I’ve been experimenting with using a pb mixture (low calorie syrup instead of water) and yogurt as little “dips” for the squash.
Because I use the pb powder I don’t use peanuts. I also don’t use coconut oil, I don’t use any oil, I find it doesn’t need it. But feel free to of course!
One thing I’ve also been playing around with is I let the acorn squash “marinade” in the brown sugar/cinnamon/low calorie syrup overnight. It think it adds! I usually throw it in the oven when I go on my morning runs- it’s such a treat to look forward to!
