I tend to go a little darker on my crust so next time I may try reducing the water temp a little bit.

    I do 130 for ny strip. The 137 club is usually only touted to render the extra fat in ribeyes.

    As others said, the 137 club is typically only for cuts with much more intramuscular fat, like ribeyes. I feel like people are misunderstanding the purpose of the 137.
