Ingredients:
6 cups chicken broth
½ cup rinsed Ralston Family Farm’s Golden Rice
3 eggs
2 lemons (juiced)
2 cups cooked, shredded chicken (optional)
Salt and pepper to taste
Fresh parsley or dill for garnish (optional)

Instructions:
– Cook the Rice: In a large pot, bring the chicken broth to a boil. Add the rice and reduce the heat to a simmer then cook until tender (about 15-20 minutes).
– Prepare the Egg-Lemon Mixture: In a bowl, whisk together the eggs and lemon juice until smooth.
– Temper the Eggs: Slowly ladle 1 cup of hot broth into the egg-lemon mixture, whisking constantly. This prevents the eggs from scrambling.
