Rate my loaf!
Something about the holiday season and fruit in your breads. Vanilla soaked raisins and the cinnamon smell so good in the morning after baking.
250g raisins, 12g cinnamon, 190g bread flour, 90g spelt, 590g AP, 640g water, 120g starter. Makes two loaves.
What other fruits or ingredients have you tried that work well?

That looks so bomb. When do you incorporate the cinnamon and raisins into the recipe?
Nice distribution of raisins. How many grams of raisins are you using in your loaf? And how many grams is your dough?
