Big time lurker in every niche sub that I’m a part of, but finally felt like I had to pay my dues and share this with the world. Every bite had me moaning (not a joke). Here’s how I made them.
10 wings patted dry, then dry brined with 2 tsp each of kosher salt, corn starch, and aluminum free baking powder (shout out Serious Eats). Added additional seasonings like black pepper, onion powder, garlic powder, and smoked paprika. Left to dry on a wire rack overnight.

350 degrees into a preheated air fryer for 30 minutes, flipping half way. 400 degrees for 5 additional minutes to crisp the skin up, then sauced.

Sauce was 4 tbsp of unsalted butter, frank’s red hot, 1 tbsp fresh minced garlic, some squirts of honey, fresh grated parmesan cheese, cayenne pepper, lemon pepper seasoning, more fresh ground black pepper, and a sprinkle of msg. Feel free to remit, add, and adjust ingredients according to your personal taste! This sauce was very reminiscent of viet-cajun crawfish sauce (think Boiling crab or Kickin crab, if you’re in SoCal). I would not hesitate to add finely minced lemongrass next time. Please do yourself a favor and give these a try. ❤️
