These were really simple yet look so delicious. 9oz tenderloin steak was first dry-brined with salt in fridge for 4 hours. Seared the steak on a cast iron, basted it with garlic butter, and finished cooking it in the oven to 115. Butter toasted freshly-sliced French bread. Topped the bread with chunky mix of avocado-cilantro-lime-S&P. Sliced tenderloin against the grain and put it on top. Whipped up a blue cheese crema with sour cream, garlic, buttermilk, blue cheese, Worcestershire, lemon, S&P. Generously seasoned all parts of it.
I ate both sandwiches cause wife is away on vacation 😁

I’m a big bread fan but I feel like I’d rather eat the tenderloin separately and have the bread on the side. Looks good though!
