INGREDIENTS:
– 2 cup broccoli florets, lightly boiled
– 2 Avocado, diced
-1 & 1/2 cup baby plum tomatoes, halved
– 1/4 cup purple onion, thinly sliced
– 1/4 cup fresh parsley, chopped
– 2 tbsp lemon juice
– 2 tbsp extra virgin olive oil
– Salt and black pepper to taste
Instructions:
– Bring a pot of water to a boil and Lightly blanch the broccoli florets for about 2 minutes, to be tender-crisp. Immediately transfer them to a bowl of ice water to stop the cooking process and retain their bright green colour. Drain well.
– In a large bowl, combine the broccoli, avocado, tomatoes, sliced purple onion, and parsley.
– In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
– Pour the dressing over the salad and gently toss to combine, ensuring the ingredients are evenly coated. Serve the salad immediately and enjoy.
