I bought these at a gas station that was very little help in helping me track down information. They were labeled as "spicy" but I left that much before the pain ended my run. I can handle stuff around jalapeño with some discomfort but these were noticeably spicier than that

I don’t know how we would help ID anything like this. It’s just a fried breaded product in the photo. Unfortunately there are tons of manufacturers of similar products.

No way of knowing who made the cheese that went in the pre battered and fried curds. Foodservice food companies will produce the same product under 10 different brands.
Where are you located? That would help me immeasurably in my guess. Specifically, if you are on the west coast or the PNW in general, and if these came from an upscale restaurant as opposed to a fast food place or even a gas station, then I might have a suggestion.
But, based on the specific size of the crumb, amount of the breading, and the general appearance of the product in question, I would say that the link that a previous user posted is spot on.
