Perfect for the Whole Family: Baked Chicken with Vegetables Recipe, Rice Pilaf, and Supangle Dessert!
Looking for a delicious and nutritious menu to delight your family? This recipe combines baked chicken with vegetables, fluffy rice pilaf, and a rich Turkish chocolate dessert, supangle. Let’s dive into the details!
Ingredients
For the Baked Chicken with Vegetables:
3 whole chickens (deboned and cut into cubes)
2 zucchini
2 carrots
2 eggplants
3-4 green peppers
4-5 potatoes
200g green beans
2 onions (small, whole)
1 tablespoon tomato paste
1 tablespoon pepper paste
4 cups chicken broth (made from chicken bones)
Spices: thyme, garlic powder, black pepper, red pepper flakes, salt, and a pinch of sugar
Olive oil (for frying vegetables)
For the Rice Pilaf with Orzo:
2 cups rice
1/2 cup orzo
3 cups chicken broth
2 tablespoons butter
Salt to taste
For the Supangle Dessert:
1 packet ready-made supangle mix (or 1 homemade recipe from chocolate, milk, sugar, and starch)
500ml milk
Small cookies or cake bits (optional, for texture)
Side Dishes:
Tomato soup
Cacık (yogurt mixed with grated cucumber, garlic, and mint)
Preparation Steps
1. Prepare the Chicken Broth:
Place chicken bones, 3 onions, bay leaves, thyme, garlic stems, and 6 liters of boiling water in a pressure cooker. Cook for 1 hour to create a rich, collagen-packed broth. Strain and set aside.
2. Boil and Dice the Chicken:
Pour boiling water over diced chicken pieces, boil for 5 minutes, then strain. This step ensures clean, tender meat.
3. Prep and Fry the Vegetables:
Dice zucchini, carrots, eggplants, potatoes, and peppers into large chunks. Lightly fry them in hot oil to lock in flavor and texture.
Keep onions whole and green beans intact for a rustic look.
4. Assemble the Dish:
In a baking tray, layer half the fried vegetables, then add the chicken, and top with the remaining vegetables.
Mix tomato paste, pepper paste, spices, and chicken broth, then pour over the chicken and vegetables.
Bake at 180°C (356°F) for 30 minutes.
5. Cook the Rice Pilaf:
Sauté orzo in butter until golden brown. Add rice, chicken broth, and salt. Cover and simmer on low heat for 8-10 minutes. Let rest before serving.
6. Prepare the Supangle Dessert:
Cook the supangle mix with milk as per packet instructions. Add small cookies or cake bits to serving bowls and pour the supangle over. Let it cool before serving.
7. Side Dishes:
Prepare a simple tomato soup by simmering tomatoes, onions, and broth, then blending until smooth.
For cacık, mix yogurt with grated cucumber, minced garlic, and dried mint.
This complete menu is perfect for any occasion, combining the vibrant flavors of vegetables, tender chicken, and sweet chocolate dessert.
