Jerk Fire Oil.
This is a spicy infused olive oil inspired by Jamaican Jerk. Use it the same as you would for olive oil— sautéing, drizzling on pizza or bread, mix with lemon or vinegar to make dressing— hard to go wrong.
Once filtered, the Fire Oil will last about one month. No refrigeration needed.

INGREDIENTS
+ 2 C olive oil
+ 1 TBSP Allspice berries (8g)
+ 1 inch Ginger, peeled and rough chopped
+ 2 head garlic (90g)
+ 6-7 Habanero peppers, rough chopped (40g)
+ 8 sprigs thyme (about 3 inches long)
+ 1 stick cinnamon
+ Rind of one lime
+ 1/2 C crushed red pepper flakes
DIRECTIONS
+ STEP 1: HEAT
Submerge a mason jar in a pot full of water and bring to a boil. Meanwhile, heat the olive oil to 350°F.
+ STEP 2: COMBINE
Carefully remove the mason jar from the water with tongs (WARNING! The jar and water will be extremely hot and will burn if touched). Ensure no water is left in the jar, then add the red pepper, habaneros, garlic, lime, allspice, cinnamon, and thyme. We leave the garlic cloves whole for a lighter garlic flavor. However, coarsely chopping the cloves will increase the garlic intensity. Then, carefully pour in the hot oil. Allow to completely cool and infuse for at least 2-3 hours.
+ STEP 3: STRAIN
Once cooled, strain the oil and serve.
