I always found roasting any nuts a nightmare to judge. Then I realised life was easier if using a popcorn popper………………………fool-proof, and quick and the nuts cook/brown very evenly.
Peanuts for Thai recipes……………………………lush.

Indians have been using curry leaves in their cooking for centuries. These leaves play a paramount role in the curries, etc. so, this is nothing new at all
