i always struggle with chocolate macarons, any criticism is appreciated
here's the recipe
Macaron Batter
125g powdered sugar
50g almond flour
25g cocoa powder
2 egg whites (70g), at room temperature
75g granulated sugar
pinch of salt
- Grind and sift powdered sugar, almond flour, and cocoa powder into a bowl. Discard lumps.
- Beat egg whites with a pinch of salt until firm. Gradually add granulated sugar and beat until stiff peaks form.
- Fold dry ingredients into the egg whites in two batches until the batter flows smoothly and can form a figure "8."
- Preheat the oven to 50°C (fan).
- Pipe batter onto a parchment-lined baking sheet.
- Tap the sheet firmly to flatten and release air bubbles.
- Bake at 50°C for 4-5 minutes with the oven door slightly open. Remove.
- Preheat the oven to 162-167°C and bake for 13-15 minutes. Depends on size and oven heat.
