i always struggle with chocolate macarons, any criticism is appreciated
here's the recipe

Macaron Batter
125g powdered sugar
50g almond flour

25g cocoa powder

2 egg whites (70g), at room temperature
75g granulated sugar
pinch of salt

  1. Grind and sift powdered sugar, almond flour, and cocoa powder into a bowl. Discard lumps.
  2. Beat egg whites with a pinch of salt until firm. Gradually add granulated sugar and beat until stiff peaks form.
  3. Fold dry ingredients into the egg whites in two batches until the batter flows smoothly and can form a figure "8."
  4. Preheat the oven to 50°C (fan).
  5. Pipe batter onto a parchment-lined baking sheet.
  6. Tap the sheet firmly to flatten and release air bubbles.
  7. Bake at 50°C for 4-5 minutes with the oven door slightly open. Remove.
  8. Preheat the oven to 162-167°C and bake for 13-15 minutes. Depends on size and oven heat.
