Last reverse seared steak to celebrate 7 months of sobriety. Came out a little rare and less than medrare like intended but still happy with the result.

    What temp did you pull it out of the oven at? Looks like maybe 90°F? I usually pull at 105° or so, gain another 5-10° carry-over then sear. Don’t gain much if you’re searing fast + hot. Either way, looks delicious and way to fkn go hitting 7 months. You deserve it.

    ribeyes need to be cooked closer to a medium temperature to allow the fat to fully render. otherwise you’re left with chewy bits of fat which can be quite unpleasant
