This is another sauce I picked up at a World Market on a business trip to St Louis. Torchbearer is a fairly available brand, but not sure how popular this particular sauce is. I got this in the clearance section for half off, so big win on that. This day in particular was a long one, and I was so exhausted, but I was stoked to try my first ever Torchbearer. I love mushrooms, and it’s not really an ingredient you see often in a sauce. When I finally got back to the hotel, after admiring the sauces I bought, I watched that animated Dante’s Inferno movie, which is truly kind of a fucked up movie. Anyway, lets review! This sauce is THICK. Like, DAMN BOY. It was an actual pain to unclog the neck. It must’ve been stored upside down and the pepper/mushroom mash must’ve settled. ANYWAY, the flavors in this sauce are all over the place. I read the ingredients before eating, and my brain was bouncing while trying to comprehend what flavor profile this sauce has exactly. It’s earthy. Even with tomato, brown sugar, orange, and molasses, the sauce wasn’t very sweet. I could taste little hints of the components, but overall it tasted more of mushroom and the peppers more than anything. The horseradish is a nice little addition as well. I’d say the heat level is around medium. I’ll be honest, I’m not exactly sure what this sauce is meant for. It’s not outlandish in flavor, but, if you actually take time to try and pick it apart, it’s quite unique. Considering it’s so thick, I would think it would be a good ingredient to add to like a ravioli or maybe a dumpling, or even a stuffed manicotti. It’d be a good addition for a depth of flavor rather than just dumping on something directly. Rest in Peace, Spicy Prince.
Feel free to recommend other Torchbearer varieties, suggest other sauces that feature mushrooms, or tell us your experience with this sauce.
**Ingredients:** Red wine vinegar, tomato paste, water, habanero pepper, brown sugar, scorpion pepper, mandarin orange, horseradish, garlic, molasses, black pepper, salt, shiitake mushroom powder, portobello mushroom powder, allspice, paprika
