I started baking sourdough in September I use Sourdough Bread: A Beginner’s Guide for my recipe I just use the higher hydration version.

It usually comes out pretty good but this one was the best I've done yet. I made it in the morning, did 4 folds over 2 hours, then transferred it to the basket late last night and put it in the fridge!

Baked it this morning in my Dutch oven and it's just so perfect!

I just have to not be afraid to make my cuts a little deeper lol
