New England-style with light mayo, celery, and lemon. I harvested these crabs from a paddle board in Puget Sound over the weekend. The winter crabs are extra briny and sweet, well-worth the cold!

What’s the dark stuff underneath? Also, any before pics? That sounds like an amazing wait to hunt for crab.

I know it’s a huge thing on the east coast, but it seems weird that I’ve never seen a crab roll. I’m from Alaska. I’ve caught thousands of dungeness, and crab is offered at every restaurant in town, but I’ve never even seen it as an option.
This leads me to think either somehow we are missing out, or more likely that it’s a waste of crab, because how have I never had it offered?
