Tonight we made the infamous Japanese korokkes. We put them off til the last possible day because I was super intimidated by them after reading all the accounts of difficulty in this sub. Finally my boyfriend was like, ok seriously this beef ain't gonna last, we have to do this. So I sighed and said OK.

But I am pleased to report that, thanks to the great advice from this subreddit, they came out awesome and we didn't die! We chilled the croquettes after forming them, used less beef in the mixture, and skipped using the potato water. All in all, A+ experience. A little stressful to start (I overthink things) but they turned out great, and the house still smells wonderful.

  2. im glad someone else had some success and enjoyed them! i was feeling kind of alone in loving them haha. don’t think these will be returning though based on everyone else’s experience. they’re pretty basic ingredients though, so i’m really considering making them again and freezing them! i’m just cooking for myself so i didn’t eat them all in one night and was surprised how well they reheated the next day.
