I use the Tartine country loaf recipe (https://tartinebakery.com/stories/country-bread) with a bit higher WW %. Been at it for a few months now, so finally getting the ear today was pleasing. Crumb shot hopefully will be as good as the exterior.

    How much of an increase in the WW? Do you have a percentage? I’ve been making this recipe for a few months now. It tastes great but I want to increase the WW. TIA!
