That looks better than 90% of steaks I’ve seen at nice steakhouses. Would smash. I like the crust, I personally go for more of a mahogany, but I don’t use any sugars on the exterior. That also could be just a tiny bit too much heat. Nicely done.

I had the “as long as it tastes good” comment all locked and loaded, but it wasn’t even needed. Looks great!
Used the broiler in our oven with steak in a smoking hot cast iron… about a minute per side.

That’s not much of a grey band, and it’s one hell of a crust.

This is a good steak. That’s not a gray band imo.
That crust is 🔥 Try flipping every 15 seconds or even 30 seconds if you’re cooking in a pan.
It’s not about less heat. It’s about how long you sear. The flipping does help, FYI.
