1/2 cup starter
1 1/2 cups water
4 cups bread flour
3 tsp salt

Mix, let rest 30 minutes. Stretch and fold every 30 minutes- 4 times.

Cover and let rise on counter overnight, about 9 hours. Shape and put in bread bowl in refrigerator 9 hours.

Preheat Dutch oven at 500. Bake at 450 for 30 minutes, uncover and bake 15 more minutes. Perfect!

Previous attempts were underdeveloped, then overdeveloped. Finally got the timing right. Started the process around noon with starter feeding. Mixed bread around 7 pm.
