Ignore the ultra-sear. Lots of burning fat in the bottom of the smoker when I went direct heat for the sear. It was still phenomenal.

    Smoking your steaks? Another man of culture I see. It’s the only way I cook steaks now. What does your setup and recipe look like?

  7. I love smoking steaks. It’s by far my favorite way to do them. Cook them at 150 if I have the time and then do a quick reverse sear on them around 110-115. Amazing every time.
