These Baked Zucchini sticks are a great healthy appetizer, little snack or a meal. This time of year when zucchini is so plentiful it’s nice to have a new way to enjoy them. RECIPE
Baked Zucchini Sticks:

Panko mixture: In a large bowl, mix
1 ½ c. Panko bread crumbs
½ c. Flour
½ t. Garlic salt
1 clove fresh Garlic, minced
2 t. Basil, chopped, fresh, frozen or dried
1 t. Oregano
½ t. Marjoram
¾ c. Parmesan cheese, grated fresh is best
1 Green onion, finely chopped

Egg Mixture: In a medium bowl, Mix together,
2 Eggs
2 t. Basil, fresh, frozen or dried
¼ t. Garlic salt
1 T. Butter, melted
Dip 4 small to medium zucchini’s, (chopped into sticks, a few at a time) in the Egg Mixture, then the Panko Mixture until well coated. Place on an ovenproof rack over a cookie sheet. Spray well with Avocado Spray. Bake at 425 degrees Fahrenheit for 20 minutes, or until golden brown. Let cool for 10 minutes before you eat. Enjoy!
