    Looks like you’re over-crowding the pan, so moisture is building up in the pan, causing them to basically boil instead of fry

    When heated it goes back to the original moulding shape

    Is that venison? You got too much water leaking out, and like the other dude said, crowding the pan. Let the meat rest to room temperature and pat it dry multiple times. Right now you’ve got steamed steak.

    Guessing these aren’t pricey cuts of meat. The connective tissue contracted from the heat and pulled it into that shape. Probably should have gone with very high heat to sear on both sides and leave rare, or braise until it falls apart.

    Why is there no color on it? Sear it, dont boil it.

    My advice is higher heat, and kitchen brick. That is a brick wrapped in foil. Once you have a kitchen brick you will find many uses for it. I use pretty much all the time when cooking onions and mushrooms.
