I used to be a professional baker, but I haven’t made macarons all year – since last Christmas. I thought for sure it would take me a few batches to get a good batch since it’s been so long and the weather has been weird. But I made these on my first try! Not a single shell cracked, they’re full, the feet are just how I like them. I could have cried!

I’ll make the filling tonight, I’m doing cranberry orange.

Recipe:
70 g egg white
77 g sugar
100 g almond flour
100 g powdered sugar
6 g cornstarch

No rest method. I baked these on convection 300° (converts to 275°) for about 19 minutes.
