Some australian "wagyu" 4-5, ribeye, which is apparently similar to usda prime. Costed me about 37$/lb. Good imported beef is extremely expensive and rare in my country.

Salted and left in the fridge for about 5 hours.
Cooked in air fryer 250f for 10 mins, 200f for 10 more, and 180f for 15 more untill it reached internal 136f. Let it rest for a few minutes, patted dry and seared on hot SS pan.

It was so good. Fat was perfectly rendered and melted in the mouth.

Apologies for bad pics, I was rushing to get into my mouth ASAP while it's hot. Weird cuts because my BIL doesn't eat fat so I had to cut around it, got the best parts of the steak for myself.

    I haven’t been making steaks like I used to. The quality has gone way down and the prices are ridiculous.
