Cacio e Pepe Soup With Chickpeas and Kale
“Comfort & Joy” by Ravinder Bhogal (Bloomsbury, 2023)

Cacio e pepe is a traditional Italian pasta dish made with pecorino or Parmesan, black pepper and a little pasta cooking water that we’ve all fallen hard for. I’ve seen its flavour profile adapted to so many dishes from gougères to pizza, and here I have borrowed its flavour for this stunning soup that is like a hearty, cheesy pasta e fagioli.

INGREDIENTS
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, finely chopped
Zest of 1 lemon
1.5 litres good-quality vegetable stock
200g curly kale, roughly chopped
2 × 400g tins chickpeas, drained and rinsed
200g orzo, cooked and drained according to packet instructions
150g pecorino or Parmesan cheese, finely grated, plus extra to serve
100g cold unsalted butter, cubed
Sea salt and plenty of black pepper

METHOD
Heat the oil in a pan over low-medium heat and gently fry the onion for 8–10 minutes until softened but not coloured. Add the garlic and lemon zest and fry for 2 minutes till fragrant. Pour in the stock, cover and bring to the boil, then add the kale and chickpeas and simmer for 5 minutes. Next add the orzo and then beat in the cheese and butter and season with salt and plenty of black pepper. Serve at once with a little extra grated cheese.

Ravinder is a journalist, chef and restaurateur, who was born in Kenya to Indian parents. Her debut restaurant, Jikoni, was ranked 56th in the UK by the National Restaurant Awards within seven months of opening and was listed in the Michelin Guide in the same year. In 2017, she launched a four-month vegan pop-up at the W London hotel, which was voted the best vegan restaurant in the country by Harper’s Bazaar within a few weeks of opening. Her debut book Cook in Boots, and its follow up, Jikoni: Proudly Inauthentic Recipes from an Immigrant Kitchen, have both won awards, while her new book, Comfort & Joy: Irresistible Pleasures from a Vegetarian Kitchen, was released in May. In 2020, Ravinder launched a sustainable vegetarian home delivery brand Comfort & Joy, a sister brand to Jikoni. She’s a monthly food columnist for the FT Weekend magazine and The Guardian’s Feast magazine, a contributing editor at Harper’s Bazaar, and regularly writes for The Observer Magazine and Vogue online. On TV she reports for Channel 4’s magazine show Food: What Goes in your Basket? and has also presented a special two-part documentary, The Great British Curry Trail, for BBC2. Other UK television credits include appearances on Sunday Brunch, James Martin’s Saturday Morning, MasterChef and This Morning. She’s also been on prime-time Indian television with her own 22-part series, Ravinder’s Kitchen (BBC Worldwide), which has been sold across Asia and the Middle East. In 2019 and 2021 Code Hospitality named her one of the most influential women in food.
