
Been playing around with hydration, 75-77% is the best for me!
Recipe:
900 g bread flour
100 g whole wheat flour
770 g water
225 g starter
25 g salt
Autolyse for an hour (flour and water) then add starter, salt, and a little water reserve. Stretch and folds 5x on the half hour, coil folds 2x after on the half hour, then continue BF until 75% rise. Preshape, rest 30 mins, shape and cold proof in fridge overnight. Bake at 450 for 24 mins covered, then 24 mins uncovered in DO.
