

I read through this subreddit for insight about specific brands of rice to use for making gimbap. I saw references to Kokuho Rose, Calrose/Botan and Nishiki. I’ve read that Korean short grain rice works best. I believe Maangchi recommends short grain.
I made my first gimbap yesterday using what I had on hand – freshly microwaved Bibigo cooked Sticky White Rice Bowls. I seasoned the rice and then made my gimbap. It was so difficult to spread the sticky rice on the gim even with damp hands. The gimbap turned out great but I don’t want to use sticky rice again at least not the pre-cooked kind.
I’m going to order a rice cooker and buy some rice. The two that are most conveniently available for me where I am are Botan and
Nishiki. Neither is a short grain. Description for both include the word “sticky”.
Just curious if any gimbap makers on here can recommend a brand of short or medium grain rice that isn’t sticky? And if it is sticky, can I cook it differently (less water, longer time) to make it less sticky?

Kokuho Rose is my pick.
Use slightly less water to make it less sticky, and season your rice with salt and a bit of sesame oil after letting it cool for a bit.
But sticky is the nature of the game.
