    Medium. I’d sear the fat cap for a solid minute tho , really render it down so it melts in your mouth

    That’s a perfect med rare. Not sure why the commenters are screaming medium. A medium wouldn’t be near as evenly pink. The pic isn’t the best so perhaps that’s why it’s throwing people off 🤷🏻‍♂️. Either way, nicely done
