I cut the membrane off this time and it turned out way better! Super tender, with homemade chimichurri.

I did the exact same cook, cut off the cap and membrane and drowned it in chimmi. Was hoping to cook a tri-tip but couldn’t find one. Would def do it again.
Was surprised how quickly it cooked at 225, I think just about 90 mins
