I do English jacket baked potato method.
It spoiled me for any other baked potato cooking method.Process is long but hands off but it’s the only way in my opinion to go from medium good/good baked potato to “,oh wow I thought i I didn’t liked baked to potato to this amazing I’ll never eat anything else again.”
But loaded or baked potato’s are cheap and filling. Wednesday nights I baked two large potatos and stuff for Thursday Friday lunches. This week I had left over rotisserie chicken so I made a simple buffalo chicken salad with Greek yogurt instead of Mayo and finely diced celery. Topped or stuffed my potatos and topped with some mozzarella and leftover blue cheese and it’s delicious.
The other day, someone on the main page of Reddit asked why potatoes weren’t considered cheap and poor college student go to food over the current champion ramen and I was like “yeah, Why not potato instead of Ramen?” A microwave does make a perfectly acceptable potato that you can top any way you like and while I think food is food and don’t judge any food healthy or bad when you’re broke, but potatoes taste so much better than ramen and are a nutritional powerhouse. I’m pro potato over ramen team.
